New dining option Hash Hub opens in Stroud at Five Valleys

Hash Hub ‘s menu uses sauteed Maris Piper potatoes and slow-roasted onions loaded with a variety of different toppings – and is billed as a new family-run independent food business that specialises in “a creative take on the traditional British potato hash”.
Now up and running, the venture inside the centre’s food hall is owned and operated by Simon Ayley who began his business trajectory in his native Hampshire hometown when he started out in the kitchen of an a la carte restaurant, soon moving to work in Berkshire and Corsica.
By 17, he was in London in a kitchen role with a high-end private members’ club before he travelled as far as Australia, picking up culinary experience from around the globe. After meeting his partner Sarah, the couple moved to Cheltenham, where they opened and ran a successful bed and breakfast for 11 years.
Since then, Simon has worked in a variety of roles before finding the ideal location to launch Hash Hub – Five Valleys Food Hall.
Simon told Punchline-Gloucester.com: “We developed the concept after exploring several different ideas, and knew the key focus had to be something distinctively British.” He said the Hash Hub will be a fresh take on the much-loved dish, drawing on his experience in professional kitchens and the hospitality industry.
“Customers can choose from a tempting range of toppings, including homemade sausage and house dry-cured bacon, as well as the classic corned beef,” he said, adding that vegan options include spiced squash, aubergine and chickpeas. “It’s all about taking a familiar favourite and giving it a fresh twist.
